Show & Tell - My Frugal Kitchen Recap

 Hello all - hope this finds everyone good today.  It is a wet and chilly morning here.  Woke at 5AM to thunder.  None of that right now, just steady rain.  Temps are to drop a lot after today for a few days.  Nothing crazy cold, but chilly for May.
Kind of glad for the rain - as I am sore and tired.  Yesterday I worked outside most of the day - bending, stooping, sitting on the ground and getting back up (not easy!) - just working in general.  Got a lot done, but I am due for a rest!
I have been outside already.  Licorice came out to his covered spot to eat breakfast - then went right back in the greenhouse!  He isn't a fool.  
Needless to say, I won't have to water anything today or tomorrow!

Today I just want to share a few pics of some of the frugal and easy meals I have done over the past couple weeks.  Using up leftovers in new ways, using the air fryer and just using up what I have.  I have enjoyed each meal - they were all filling and tasty and cost very little.  I know it may not be for everyone, but maybe it will give you some ideas.
Sometimes just saying what you have isn't all that appealing - some people need to see it.

Cabbage steaks with seared peppers and leftover taco meat/rice in a street taco tortilla
Roasted cheesy potato wedges (air fryer), corn and fresh veggie bits.  No meat, but super filling
Toasted crusty bread, chicken pieces/slices, and cabbage/carrots/cukes julienned with Italian dressing.  I got this inspiration from the chicken cookbook - it was so very yummy.  Nice cold meal.
Veggie/pasta salad and jalapeno summer sausage and crackers.  Great for a hot busy day.

2 Mexican pizzas.  Yep, 2 - I was extra hungry that day.  Very yummy.  Tostada shell on bottom, soft tortilla on top.  Refried beans, meat, cheese, salsa, taco sauce & chopped tomato.  Get creative and design your own.
Corn, chicken legs (air fryer) and sliced carrots.  You can have a salad or another cooked veggie or more chicken legs!
Cream cheese/veggie wraps.  Use whatever type of veggies you have - can add meat or cheese as well.  It was a hot day here and it was perfect and very filling.
Tuna salad sandwich, pickles and handful of pretzels.
Rustic succotash (red beans, chickpeas, corn) - pork roast from freezer (made Easter) and fresh veggies
Leftover pork shredded, l/o succotash with some BBQ sauce added to all & served over rice.
Easy and yummy & best 'thin crust' pizza.  Used a tortilla, so very little crust, yet a lot of crunch.  Used l/o shredded pork, bacon and various veggies I had.  Spread with some tomato paste sprinkled with Italian seasoning, then a little salsa - then toppings.  Baked in the air fryer at 400* for about 10 - 12 minutes.
Great way to use veggies that need used or leftover meats - you can do anything.  Add a salad if desired.
I had a milkshake a little after eating!!

I hope this gives some ideas to some on ways to stay frugal in the kitchen and use those 'makeovers' in new ways.  I feel I eat good, and I am always full.  I try to sprinkle veggies, protein and a few carbs around.  Remember protein doesn't HAVE to be meat.
I truly enjoy being creative with the things I have right here in my pantry and my freezer.  It is fun and always a challenge for me.  I love it!

    It does look like you eat well.

    It does take a little bit of creativity. I learned that by doing. At first I did use a lot of recipes because I needed to learn how to cook. But I eventually got to where I can open the fridge and think what can I do with this? I've made some mistakes but mostly nowadays I come up with something tasty and filling. I buy mostly lost leaders/ good sales/clearance items so creatively helps.

      I am the open the fridge kind of person! I eat whatever floats my boat on any certain day! I love food, but I also like variety.

  2. Amazing meals! Unfortunately, i don’t like to cook, but I do like to eat.😉 I’m not creative in the least, and also have a lot of restrictions. Ugh! I do manage to eat healthy, but boring, but I am thankful for all my meals. Have a nice day. PS Thank you for the pictures of your lovely porch. Would love to see your veggie garden. Have a nice day.     1. I like to cook and eat! None of the meals above are hard at all - as a matter of fact, they are super easy.

  3. Fabulous meals! All very healthy meals, all pretty on the plate. Not only do we eat with our mouth, we eat with our eyes too. We make our pizzas with tortillas and love that thin crust. Turnips are on our menu as we have lots of them. That is a versatile veg, as we do not eat potatoes because of the starch. Green beans are up. The Farmer planted some of the really long ones and one I think is called a snake bean. Tomatoes are blooming. With this rain, everything, including weeds, will pop up.

    1. Yes indeed, we do eat with our eyes as well. I really like the tortilla pizzas.
      I like raw turnips - sliced raw and salted!
      You are very ahead on your garden. Nice to hear it is all doing well. This rain will be great, as long as no gully washers or hail!!!

  4. I always love to see your meal combinations, it does give me ideas. My son was here for a week on vacation. I forgot how much he can eat, ha ha. We had a good time I cooked some favorite meals for him and we did eat out some. I sent leftovers home with him, (chicken and rice casserole). We had a good visit and we took a drive to see Mt. Shasta, always impressive. It's Tuesday and we are getting back to normal.

      I am so glad your son got to stay for a week. Sounds like you had a nice time. Mt. Shasta is awesome - would love to see in person. Now you need rest from your adventures!!!!

  5. I want to add for all the folks who don't "like" to cook. Me either!

    But I learned because I had a family to feed. Eventually I got where I am now as I posted above. Honesty, if I didn't have to now I wouldn't. But I'm not going to eat out or buy prepped food sooo I cook. And I do a lot of what Cheryl does. It's fast, cheaper and healthier. It often even tastes better than a restaurant! (When I did cook big meals regularly when I had kids here they preferred to stay home and have me cook rather than go out so I guess I mastered cooking.)

    Cheryl probably has more variety than we do. My husband and I often eat the same thing for 2-3 meals.

    1. It is tougher cooking being alone. I was always used to cooking for hubs and he loved to eat. Now I still eat good, but it is easy and quick stuff. I sure am not going out to eat all the time either.
      In the winter I eat a lot of the same things - chili, soups, casseroles, for days! I don't mind.

  8. I like being able to create a meal, and it need not be what one would expect... it just has to cover the bases, be tasty, and filling.

    A giant zucchini makes a lot of soup. I work on that for some days. :) I like eggs, salad, veggies. Many things go ok together but are not "the usual". Your meals pictures are good to see, make me think of other ways to present my food. :)

    1. That was my goal. I am not always conventional at all with meals. I eat what I like, however long it takes, and others may not think it would work for them. I eat to live - I don't live to eat. It is all good, whatever you decide to serve.

  9. I grew up on leftovers and also on three ingredient meals. It was the best. Really gets that food eaten.

  10. You definitely feed yourself very well. Lots of colour and variety!
    It's cold here and I'm craving carbs, pasta, bread, and potatoes are or have been on the menu. Hopefully we see some warmth soon, and I'll be back to enjoying salads (including pasta salad).

    1. It is simple, but good. Color makes the plate and the meal just appetizing in my opinion. I sure hope you warm up soon. I love comfort food when it is chilly.

  12. Great ways to use what you've got. And don't you just love what you can do with an Air Fryer? I was a late adopter, but now can't imagine not having one.

    1. I bought mine for a cheap price at a yard sale - and figured if I didn't use, I could donate. It took off slowly - then I decided I really like it. Keeps the kitchen cool!

  14. Cheryl, these meals are amazing! Why doesn't my brain think like this? I have no idea, but I wish it did. I think the key is to have a nice variety in the fridge, freezer and pantry. That way you can get creative. You're always teaching us things :)

    1. Ah thanks. This is how I grew up - so I learned to experiment. It is all good, so why not put it together? I think it takes time to get in this mindset - you could do it too. Thanks for your kind words.
