Hello all. Hope you are all well this Thursday. It is another cool morning here, and pretty cloudy. It looks and feels like fall - but summer will be back, so no worries.
I woke up on time this morning, and the bed felt so good that I fell back to sleep! I got up about 20 minutes later than normal - I always feel rushed when I do that. Like what schedule do I have to meet? LOL
Today is a bit about doing the substitutions we keep talking about. They are easy, use what you have, and keeps you from making a special trip to the store. Hope you get an idea you can use.
BUTTERMILK (not for drinking)This is for using in a recipe
1 C milk
1 Tbsp. lemon juice or white vinegar
Let it stand 5-10 minutes then use in your recipe
**You can also buy buttermilk powder in the baking aisle. I always have this on hand - it lasts a long time. It just mixes w/water.
HEAVY CREAM
2/3 C whole milk
1/3 C melted unsalted butter
Mix together and use as cream in baking (doesn't whip)
1 C regular sugar
Place in a blender and pulse until powdered
1 Egg = 3 Tbsp. mayo
Use Applesauce for 1/2 of oil in a baking recipe
Unsweetened chocolate 1 oz. - 3 Tbsp. cocoa plus 1 Tbsp shortening or oil
Colored sugar for decorating = sugar and food coloring. Use color you want and stir until thoroughly mixed with sugar. Works perfectly - I do this all the time
CREAM CHEESE - use full fat cottage cheese and pulse in blender until smooth. It won't taste like cottage cheese. Great for recipes
BROWN SUGAR - 1 C sugar w/ 2 Tbsp. molasses added - stir until blended - (light)
add 4 Tbsp. to 1 C for (dark)
CHOCOLATE ICE CREAM SHELL
EVAPORATED MILK
1/3 C nonfat dry milk
6 Tbsp. water
SELF RISING FLOUR
I always buy all-purpose flour - no worries about the leavening agent going bad over time
Easy way to make self-rising
1 C all-purpose flour
1 1/2 tsp. baking powder
1/2 tsp. salt
You can do the same with cake flour as well if you want it self-rising
LEMON ZEST
1 tsp. of zest = 1/2 tsp. lemon extract
1 tsp. zest = 2 Tbsp. lemon juice
Just a few ideas to save a little money and time. In the middle of a recipe, you hate to see you are out of something - this saves you a trip out. Hope you find an idea you can use!

It's always good to have a substitution ready when making something. Better than running to the store and spending more than you intended.

The substitutions are great, I do most of them except for two that I hadn't heard of before...the heavy cream and chocolate shell. Thanks, I will definitely be trying those.
