Morning all. Hoping this finds you all well. It is a brisk morning here, but nothing falling from the skies! Yesterday we actually got above freezing for the first time in almost 2 weeks! Glorious. We had some melting going on - the road went frozen ice to slushy. This morning, after a cold night, I have watched all the neighbors struggling out there. It is back to ice!
The rest of the week will be no super high temps, but nothing in the teens for highs! Moving in the right direction. Hope all you southern folks are doing OK and are safe.

Not an item that is expensive but keeping it REAL and no chemicals is important. Mix up and jar a bunch and always be ready with flavor.NUM/YUM - what a fun and inexpensive treat! I have made these before, and they are so stinking good. I have exchanged milk for beer in years past (beer batter) and they were yummy as well. Just throwing that out there to show you can use what you have.
Making crackers is so easy. I know, crackers aren't super expensive, but again this is a clean recipe with no chemicals and preservatives. Fresh and yummy.
I did have crackers on hand, so I used those as well. I plan to make some crackers very soon. I don't get through store bought before they get stale.
Another super cheap meal I made this week. It was great and have extra for another meal or at least a nice side.Found this pack of veggies in the downstairs freezer - look at the clearance price I paid! I also found a small, pre-cooked b/s pc. of chicken breast in the kitchen freezer. Cut it up added to veggies and seasoned with my sauces on hand. Served over pasta instead of rice. A nice change and very filling.
COST = probably around a $1 for 2 meals!
You can eat well and cheaply if you just PLAY WITH YOUR FOOD! I know I keep using that phrase - but it is so true. There really is no limit to making inexpensive meals that are very filling and oh so yummy with what you have on hand. With both of the above homemade meals - there was a grain, meat, and veggies included. Pretty healthy.
INGREDIENTS!!!!!!! That is the magic word. Just look at the pantry and the freezer and see what ingredients you have that can be combined into something new and unexpected. You may the next new favorite!

It is definitely colder this morning! I noticed that what thawed has frozen again. I need to take Jacob to the vet this morning and will take my time. Riley knows I'm leaving so he is crying and anxious.

Stay warm! That's what I'm going to do when Jacob and I come back from his yearly checkup. He seems to be healthier than Riley so I don't anticipate any big issues...pray not.

Good day, Cheryl! Yes, I have been working harder at being a better steward and using up what we have. I will need to restock soon and you have given me ideas. Monday, I had leftover mashed potatoes ( a lot from hosting an event) and turned it into potato soup with frozen ham I saved from Christmas. It was delicious!! Thank you for sharing the Lipton Onion Soup recipe as I use it a lot in things. I do want to start using more INGREDIENTS ONLY recipes and create better stocked pantry for that.
ReplyDeleteIt is a journey I think we all need to work on. That is a great reuse of the potatoes. I like to make potato patties as well soup. Use those on top a small veggie pit (shepherds pie).
DeleteIt is so nice to have things homemade in the pantry. It is great to know how to make these things, just in case. We never know when we won't be able to shop.

Using ingredients is great but I often rely on store-bought products instead. I use a lot of crackers (lunch is often cheese and crackers or salsa and crackers) and personally can’t imagine making them. This is one product that I’m picky about and prefer unsalted Publix brand over Nabisco Saltines or Aldi brand (no unsalted option).
ReplyDeleteInteresting that the copycat Lipton soup recipe uses celery salt. I love celery salt and it is expensive and somewhat hard to find. I stocked up (which for me means 3 jars) a few years ago when I found a good deal.
Might sound morbid but with no close family, I don’t care about living to an old age - actually do not want to do so. So I don’t mind preservatives/chemicals. Just being honest.Barbara M.

DeleteI have never had a problem celery salt around here. I usually get a bigger bottle at Ollies. Salts last forever, so a good deal to stock up.
You make the choices to eat what you want, do what you want - no problem. I truly want to live a long while yet, to watch the littles grow up. I try to stay healthy.

ReplyDeleteThis week I was given a box of tomatoes so I've been chop, chop, chopping. I wasn't very inspired to do anything too exciting, I think the sheer amount of produce was a bit daunting, but I did manage to get a couple of different combinations of meals prepared and frozen. It did cause my budget to blow out a bit having to buy more onions, lasagna sheets and cheese, but I'll save in the future.
Linda and I have been out for a coffee this morning and she picked up some wool from the Free Table. That will keep her occupied for a few days working that into mittens and scarves, and I can crack on with my cleaning.

DeleteGreat on the FREE tomatoes - I think tomatoes are the most versatile bit of produce we can get. So many options of things to make. I used a jar of chopped toms today with making rice - kind of like Spanish rice with seasonings.
How nice that you went out for a nice morning. Hope Linda comes up with a nice use for the yarn!
Because I can get fresh veg so readily here and at reasonable cost, I've been eating some new-to-me meals here. Less protein as the prices are much higher than at home, but I'm enjoying the variety and flavours of my meals.

DeleteSome months ago I got large can of tomato juice for 50c which didn't expire until summer 2026. Nothing wrong with can either. I don't drink tomato juice but I figured for that price I could use it.
ReplyDeleteI used half the CAN for vegetable soup. I didn't have any broth or stock so this was a good substitute to add with the water.It was probably 10 cups of soup at least using cans of vegetables I got free or for 25c. I don't usually buy canned vegetables but couldn't pass up the price. It was so good even the grandkids ate it. Twice. That big pot of soup probably only cost around a dollar.
I used the other half of the can to make enchilada sauce. Enough sauce for 4 meals of enchiladas using ingredients I had on hand. It was so good I enjoyed all 4 meals within 4 days. Lol
WOW that was a deal. Great use you made of it. I would jump all over deals like that. I like to use tomato juice in chili, my FIL always used V-8 - and it was so good.

ReplyDeleteAlso worked on an issue I'd been worrying about for weeks. Spent the afternoon on the phone, set up an appointment, and I think it may all work out. Now I can quit fussing with it when I wake in the night. :)
That's a cool thing to have, that CopyCat Lipton Onion Soup Mix. Keeping it, for sure... I use the lipton one on brussels sprouts as a seasoning: just sprinkle some powder and onion flakes over when roasting the sprouts - or in my case, pan frying halved sprouts in olive oil. Tasty.

I love the onion soup - it is good on/in so many things for extra flavor. Sounds yummy on the sprouts. Will give that a try next time.
