Hello to all. HAPPY EARTH DAY!
Hope this finds you all well and safe. It is a beautiful morning here. Low 60's and the sun is shining. During the night I heard a little thunder off at a distance - but I don't believe we received any rain here. It seems to circle all around us so many times. It looks to be a glorious day.
Today I want to give you a 'recipe' for an easy, tasty and healthy treat or dessert. I made this and I see no limits to what can be used. I mean you know me a 'recipes'!!! They are just suggestions for me.
FROZEN FRUIT YOGURT BARS
2 C plain yogurt
1/2 C honey
1 tsp. vanilla
1 1/2 C fruit
Mix the yogurt, honey and vanilla until all incorporated. Fits in an 8 x 8 pan. Line with parchment paper for easy removal. Pour mixture in pan and then add the fruit. You can place just on top or push in a little. Place pan in freezer for a good 4 hours - then cut into bars.
SUPER yummy!!!!!!
ENJOY!
You can use any kind of fruit you want - strawberries, bananas, blue berries, peaches, pineapple........
I well imagine you could add nuts, crunchies or something else on top. Also, I would say you could use whatever yogurt you have on hand. All you have flavored? Use it.
I do believe the honey (not only for sweetness) helped it not freeze too hard.
Such a wonderful treat. Cool and refreshing. AND healthy!!!!!!
Hope you all have a wonderful day and maybe do something fun for Earth Day. Go pick-up some trash somewhere, plant a posey or a tree, create no trash today, eat natural, just do something. It is something we should be doing every single day - not just one day a year.
Have a super and beautiful day.
Happy Earth Day to you. The pastoral care department at work gave us American plum seedlings to celebrate the day so I'll be planting that soon to see if it grows. I made this last week with Greek yogurt, and I used a cut up pineapple that I froze for a couple of hours. It was a tasty treat. Have a great day.
ReplyDeleteHow neat that they gave out seedlings. Hope it does well for you!
DeleteOh that sounds good. Thanks for attesting to the fact that it is yummy.
You are so right...taking care of our earthly home is not just a once a year celebration, a reminder. We have several houseplants, which helps to clean the air, and lots of growing things in the backyard. Mature trees help to clean the air and provide shade to help cool our homes.
ReplyDeleteThe frozen yogurt bars look yummy! We have green strawberries, so may have to make this when they ripen.
It is a lovely day in the neighborhood. The Farmer has a dental appointment this afternoon so we are faffing about in the house until time to leave.
Enjoy this perfect day!
We sure do need tom take care of this old earth - it is the only one we have. I have the houseplants, and then love getting to open windows - fresh air. Everything in the yard helps support something else. It is just an amazing world.
DeleteIt is really good!
Have a fun day - the weather is perfect.
Oh, this sounds delicious and refreshing! Thank you for the recipe.
ReplyDeleteYou betcha. It is good and easy and healthy - checks all the boxes!
DeleteHappy Earth Day!
ReplyDeleteIt's also International French Immersion day too, so our school is celebrating that too. :)
The bars look yummy and refreshing! I'm thinking using vanilla yogurt would work well.
What an excellent idea that is! It makes me want to buy yogurt again. :) I'd become tired of it, but this would be different.
ReplyDeleteSpent the morning trying to reconfigure computer stuff. Am exhausted, that always just wears me out. I'm sure we're only half done.
Now to go do a bit of yard work - it's gorgeous today!
