Chocolate Mayo Cake

Some of you may be needing to make something for the upcoming holiday and have nothing in mind.
Here is an easy cake to make, that is both yummy and moist.  You should probably have everything you need right in your pantry!

GRANDMA'S CHOCOLATE MAYO CAKE
2 C Flour
1 c sugar
1/2 C cocoa
1 tsp. baking soda
1 tsp. baking powder
3/4 C mayo
1 egg (only is you plan on making cupcakes)
1/2 C cold water
1/2 C brewed coffee
1 tsp. vanilla

Preheat oven to 350*.  Stir all dry ingredients together.  Combine wet ingredients with dry until smooth.  Pour into a greased and floured (or cocoa'd) pan.  Bake at 350* for 30-40 minutes for a cake or about 16 minutes for cupcakes.
Cool then frost.

CARAMEL FROSTING
5 Tbsp. butter
1 1/2 C brown sugar
3 Tbsp. boiling water
1 tsp. vanilla

Beat butter and slowly add in sugar until creamed together.  Pour in boiling water and beat till creamy.  Add vanilla.

There you have it.  An old fashion recipe that is both easy and frugal.

  2. what a nice recipe, to use up that little bit of coffee left in the pot, and mayo too, scrape that jar down!
