Howdy all. Hope you are all well and safe. It is a muggy and wet morning here. Currently 75*, drizzle and super humid. We had rain last night as well - nothing heavy - but rain. The garden plants just look as they have shot up each morning! The weather is perfect if you're a plant!!
Sunday I was out in the perennial bed, pulling out poison that 'thrives' in our area. If you kill it, you kill good plants as well - it is all so close together. Well, guess what? Yep, I have some places on my arms already that are so stinking itchy. I tried so hard to be careful - but it happens. Cold water and anti-itch gel are helping. (part of my summer every year)
Today, sharing a couple of fun uses for things from the kitchen. You all know I like to change it up some - so here are a couple fun things to do. They cost very little, they taste very good, they take very little time and IT'S DIFFERENT!
My own McGriddle! 2 sausage patties that were already cooked from the freezer, 2 eggs, and 2 small waffles (freezer). I added a piece of cheese as well. Talk about a filling and tasty sandwich - which made a meal for me. I often eat a little salad or some fresh veggies or fruit, later in the day.
Naan bread pizza! Used goodies I had around. Olives, pepperoni, broke up a sausage patty, onion, pepper and a tomato. Of course, a little sauce (I used an open salsa) and cheese. Again 360* for 10 minutes in air fryer. You could add whatever you have on hand.
I wanted tacos. I wanted hard shelled tacos - but had no hard shells, just soft. So, what did I do? I gently folded them over and put in the toaster!!! They were crunchy on the outside, soft on the inside, easy to fill, kept their shape and didn't fall apart when eating! Talk about a win!I used the street taco size - that is what I had, and they fit perfectly in the toaster. End result was yummy and NOT messy to eat!
The waffles were homemade, the sausage was from a markdown, and I had the eggs. Pretty inexpensive meal!
Going through the freezer I found these Naan bread I got on clearance. I used one each for a meal - that is .70 per meal + things I had on hand. I will be making my own Naan soon.This one was a 3 cheese jalapeno/bacon bread. YES, it made a meal for me. I used cream cheese, nacho cheese and cheddar cheese - sliced jalapenos (and a small red pepper), and bacon bits (I also added a few chopped olives to add a bit of salty). 360* for 10 minutes in air fryer. I read the tip about the soft tacos on FB and decided to try it. I will be doing that from now on. Saves money - as I can also make my own tortillas, and nothing to break or go bad in the pantry.
**I have also heard of people laying soft shells through the grates in the oven (to make taco shape) and baking low and slow. That would work - but the toaster is easy and didn't warm the house up.
Just a couple of new ideas to have fun and get creative with your food. There are no limits to what we can do, and it sure helps keep things from getting boring. Even if you don't like to cook - these are super easy and only take a few minutes to make. Very thrifty too.
Now that the heat is on for summer, I like easy foods and things that don't heat the house yet fill me up.
Am I the only one who likes to play with their food????? LOL
I am also a huge salad fan - all types of salads during the summer months. Just keeping it cool and yummy here! A meal can be anything you want - it doesn't have to be 'traditional'.

I play with my food as well. The tikka masala naan pizza made last week used leftover coconut rice as one of the toppings. The last of jarred artichokes was added to the mediterranean pasta salad. The goal in my kitchen is to avoid food waste. A recipe is just a suggestion.

DeleteI like to switch things up a lot too. I don't like eating the same thing all the time. It's the time of year for us to eat smaller, lighter meals also. Homemade naan and tortillas are so easy and delicious. I love to make naan pizza. It's so delicious. And BIG salads are a staple in our house. The options are limitless.

I love the crunchy taco truck. I prefer the taste of flour tortillas to corn, but the flour are always soft. I usually grill or air fry to get the crunchy, but the toaster is convenient. We love naan bread and it makes a great base for other meals as you have shared.
ReplyDeleteSame here - flour over corn. I like a crunchy taco once in a while - so this worked out fine. Naan is just yummy and you can put ANYTHING on it.

ReplyDeleteWe have not tried the toaster taco trick. I prefer a taco salad as I think tacos are messy but this would work really well. We keep the street taco size on hand, good for so many things. The Farmer and I made spelt bread and it is delicious. We have barley flour to try next and maybe a combination of the two flours later. I found several recipes for spelt naan bread, both fried and baked.
Enjoy your day! I was going to do some weeding and may if the ground dries a little.
It worked well. I didn't lose a thing out of the tacos and they didn't break! I love taco salad. Love that you are bread making.

Rain is headed our way this evening and into tomorrow. I use the flour shells for tacos, too, but fry them in a little oil in a frying pan to make tostadas. If you catch them before they get too well done, you can fold them over. I prefer layering mine up on a flat crispy one. I've also used them as a pizza base, placing them on a cookie sheet, and you can also brush them with melted butter, sprinkle with cinnamon sugar, and cut them into 6 pieces and bake until golden for a sweet after-tacos dessert. -- Lori K

DeleteI use the bigger tortillas for pizza too. The dessert sounds yummy too. They sure are good for lots of uses.

DeleteI like playing with my food too and enjoy the "how can I make this at home" challenge. At this time of year we eat a lot of salads and a lot of chicken. All the family like the taste of barbecue sauce, but aren't keen on the texture of it. I found barbecue seasoning mix in the spice section of the supermarket, along with Moroccan seasoning. Both liven up a bit of chicken and make meals just a bit different. I have learnt how to make my own Moroccan seasoning, so next I will tackle making my own barbecue seasoning. Years ago I had a jar of Cajun seasoning, but can't seem to get that any more, so I will have to look into making that too.
ReplyDeleteChicken is a good staple for summer. I love salads too. Like the idea of the seasonings! I like BBQ - but usually there is too much sauce so the spices sound like a good idea.

Sometimes you just need some crunch! Happy you got rain, hope north of you has gotten some too. It sure is better for the plants than faucet water.

DeleteLove playing with different food ideas. Yours sound so yum. We never by corn chips anymore but make them by cutting a homemade corn tortilla into six pieces and brushing with a little oil, sprinkle with salt or whatever seasoning you want and bake until crispy. Made a peach upside down cake for Fathers Day using the recipe for a Vanilla Wacky Cake. Great recipe and doesn't need eggs or dairy. Put the canned peaches on the bottom with some coconut sugar and pecans and poured the cake batter over top. It was delish. Made some more homemade chocolate bars using unsweetened cocoa, coconut oil and maple syrup. Great inexpensive treat. Cookie

It is so amazing of all the yummy foods we can make and it doesn't have to cost much at all.
I love the way you made those taco shells. I have made naan breads and flat breads quite often. You reminded me I need to get some done and in the freezer. Playing with food is fun.

Absolutely to a meal doesn’t need to be a full traditional meal! Great items. It always AMAZES me the obesity (and often they are frugal bloggers - which is a real head scratcher) that comes from eating full heavy meals. Light meals and snacks are plenty!! Frugal on your wallet and frugal from saving health costs.
ReplyDeleteI agree. To me a meal is whatever I fix that fills me up. Is it always balanced? No. Doesn't matter - I get all the food groups at some point - so I eat to maintain my health and weight.

I make what others might consider odd combinations, usually to use up what food is left in the fridge or cupboard.
ReplyDeleteI make a vegetable mild curry once a week (it lasts me a few days) and I always add pasta. I often get comments from others along the lines of that is not right. But I just love my curries, and I am not a massive fan of rice.
If you like it - it is right! I make many combos that people probably think is odd too - I don't care. I am the one that eats it, not them. It all goes down to the same place! I hate wasting.
