Throw Back Thursday - 2018 Fresh Veggie Uses!

 Today is kind of a throwback day.  Let's take a journey back to 2018 when the gardens were producing great produce.  When items were in abundance at farm markets.  When fresh produce was easy to get and plentiful.

There are a bunch of great recipes to use for summer eating.  We all like to stay cool (especially this year) and these are all nice lunches and dinners and sides that you can probably make with what you have at home.  Love reading back - so many of the same people are still hearing and commenting.  That is just plain downright cool to me!!!!!

  1. My husband always jokes about the grits bush in the backyard! LOL!

    If you watch Mornings with Granny on YouTube you may have seen that she slices yellow squash or zucchini and coats it with yellow cornmeal and then she lets it sit for ten minutes to set the cornmeal. Then just throw it all in a skillet with oil and fry it. So easy and no fuss and delicious! It is our new favorite way to eat veggies.

    1. I love fried zucchini. I do it a bit different but love it. I love fried green tomatoes too. Summer favorite.

      Today is rice with all kinds of veggies and garlic - Mmmmmm.

  4. If anyone can grow birds from seed, it would be you. I have been craving fried squash and okra. I have squash here but will have to go to the farmers market for the okra. Are you growing any peas, black eyes or purple hulls? For some strange reason I have been having dreams about shelling peas. They already have them shelled at the farmers market, don't they know have of the joy is shelling the peas?

    1. LOL too funny. I would give growing birds a try!!!!
      I am growing okra - just get a couple pods at a time - so I am cutting and freezing and bagging - till enough to fry!
      No I haven't grown peas. That is a fun job - I wonder why they wouldn't sell them in hulls? I remember doing that as a kid.

  5. Hey, I have a whole bunch of millet growing in the rocks where I tossed birdseed last year. We did not put it out this year, because we were asked not to due to Avian flu. But some of it seeded and now I have birds flocking to the millet. What can I do? Nothing:)

    1. Heck - natural feed. I have sunflowers and millet growing as well from dropping seed. Birds like the echinacea seeds as well. I am feeding once in a while - but they have good food.

  6. That is too funny! Wouldn't have thought of that...how clever! I really appreciate the variety of ideas. Right now we are so blessed with all the garden bounty. It is nice to have reminders and new ideas how to serve them. Thank you!

  10. Thanks for the link. Good suggestions. I'm making that zucchini pie for my daughter today. Her son is sick and she could use a meal. My daughter likes to make pasta salad using Olive Garden dressing. Says it's the only way she likes pasta salad. I find the right dressing matters.
