Discovering Hidden Gem

Yesterday I got on a cleaning, de-cluttering kick again.  So much stuff!!!!  (I have 4 boxes to drop off today).
While I was cleaning out a kitchen cabinet - I came across a little gem hidden way at the back of the cabinet.  Somehow this little item must have gotten shoved back there, and well.....I guess I hadn't removed everything for a long time!!!!

I have no recollection of receiving this little 64 page cook book.  I was thumbing through it, and boy is there a lot quick and easy recipes.  Cheap too!

Click on picture to enlarge.  I am not sure of ALL of these items listed are still available - but I know many are.  There is quite a variety available.  I do like the general baking mix.  I know I can make my own, but heck it is actually cheaper to buy a big box of Jiffy.  I do get the cornbread mix once in a while - however I do prefer cornbread made from scratch.  I have also bought the pizza dough mix - I can make a nice pizza dough for less than a dollar.
I remember back in the day (late teens) I used to have a thing making the blue berry muffins.  I had my first apartment - and that is what all my friends wanted on Friday night while watching Nightmare Theater!!!!!!!!!!!!!!!!!!!!!  LOL

I did find a couple recipes I thought I would share.


JIFFY CHOCOLATE FUDGE
1 pkg. Fudge frosting mix
6 tsp. hot water
1/4 C chocolate chips
1/2 tsp. vanilla
Generously butter a 5 x 9 loaf pan
Blend frosting mix and hot water in a microwave safe bowl and cover with a paper plate.  Microwave on high for 3 1/2 minutes Remove and test with candy thermometer to 240*.  Stir in chocolate chips and vanilla and mix well.  Pour in prepared pan.  Cool completely and cut into squares.  16 pieces.
Quick and easy recipe for a small batch of yum!


MEXICAN CORN PIZZA
1 pkg. corn muffin mix
1/4 C flour
1 egg
1/4 C milk
2 Tbsp. chili powder
1 an chili without beans
2 C shredded cheddar cheese

Preheat oven 400*.  Grease a 9 x 13 pan.
Combine muffin mix, flour, egg, chili powder together and blend well.  On floured surface knead dough 10-15 times until dough is easy to handle.  Press into bottom of prepared pan.  Spread chili over the crust and top with the cheese.  Bake 15-20 minutes.  remove from oven and cut into squares.  Let it set for about 10 minutes before serving.

I will definitely be trying this one.  Sounds tasty and very easy.  This would be good with a salad and company!


FRY BATTER
1 C baking mix
1/4 C +1 Tbsp. milk
1 egg

Beat all ingredients together until smooth.  Prepare your choice of meats and/or vegetables.  Dip veggies or meat into batter and let excess drain.  Drop carefully into 400* oil and cook until golden brown.  If batter gets too thick add milk a little at a time.
This is a nice way to give a good solid breading on food items.
I often just dip in egg and then flour/panko/cornmeal - but this will give a much better and uniform coating!

There you go - a couple easy and inexpensive recipes.

I don't know if they still have these available - but it may be worth a try.
It really is a fun little book - I think now that I have FOUND it - I will use it!!!!

  1. I'm not sure we have Jiffy here in Canada, at least I don't recall seeing it. But I'm sure we have something similar. The Mexican pizza sounds good to me too!

    1. I guess it may be a U.S. thing. Any small box of corn bread mix or basic baking blend would work on the fry batter or the Mexican pizza.
      It is amazing how different countries have such different products.

  4. What a fun find!
    I buy Jiffy cornbread to make a corn casserole at holiday meals.
    I do remember buying Jiffy as a young bride as it was low cost and the boxes were small, more suited for a small home.

  5. Jiffy mixes are great but the corn bread has way too much sugar for me. I love a cook book I have called 101 things to do with a cake mix. It is great for a fast dessert.

  6. Thanks Cheryl, I had forgotten how handy these little mixes are. I use to use them a lot in the past and thanks to you I will be using them again as we are trying not to stock anything up as we get close to moving.

  8. I went to the Jiffy website and they have tons of recipes online, too! As Rhonda said, I remember using them back in the day when I first got married. They are a good size for one or two person household.

  9. Flashback!! I remembered the blueberry muffins, too! When my friend and I slept over each other's house, those muffins were our breakfast every single time! I think it made 6. I still keep a couple of corn muffin mix around.

    My brother called me a couple of years back and asked me for a coffee cake recipe I used to make my family every Saturday morning. I had completely forgotten about that and had to confess my secret...that it was off the side of the Bisquick box! I googled it and sent it to him. He was thrilled it was so easy as he's disabled. He called later and said it tasted better now. Why? He drinks coffee now!

    That little book sounds like a real treasure. My MIL gave me a couple of her old little books. One was Campbell's and the other was Jello. No Jiffy. I guess those little boxes weren't much use to her with 9 kids lol!!! I'm surprised she didn't have an Army cookbook in there, ha ha!!!

    1. Yes, the blueberry muffins were so good as I remember. That is neat about the coffee cake. Glad he enjoyed it and the fact that it is even better today! Most things diminish as we get older - it seems our minds remember things bigger and better than they were!

      9 kids!!!!! I would say she needed a cookbook for an Army!

  10. That little book is a treasure. Got me through my twenties with lots of fun frugal recipes. I think you can still get a copy free on Jiffy's site. It used to be a regular freebie. They might have the PDF free too.
