3 Flavorful Dishes From the Pantry

 We all get tired of the same old things to eat.  It is nice to have some variety.  You all know I love anything that even resembles Mexican food!  I like flavor.  There are just certain flavor combinations that are great together.  You can make these as mild or spicy as you like depending on ingredients.  Also note - these can be changed up to use what you HAVE, there is no set way to make them.  
Hope this gives someone a new idea and a little variety.


SOUTHWEST SALSA CORNBREAD
1 1/4 C all-purpose flour
1/4 C cornmeal
2 tsp. baking powder
1 C corn - can use frozen or canned (drained)
3/4 C milk
1/2 C salsa (mild to hot depending on your desire)
3 Tbsp. oil
1 egg
Heat oven 400* and spray a 9" pan with non-stick spray
Blend all dry ingredients and stir till blended.  Add remainder if ingredients and stir until just well blended.
Bake at 400 for 18 - 20 minutes.
This would be great with beans, fried potatoes or any meal.  I can see using AS a main item for a meal.  I am thinking a big warm slice slathered in butter with a nice salad!!!!!
It would make a wonderful warm breakfast bite as well - or even for an evening snack.


SCRAMBLED TOSTADA OR TACO (non-meat dish)
6 eggs beaten (or egg products if desired)
1/4 milk 
salt, pepper
1/2 C diced peppers and 1/2 C chopped onion (use what you have)
refried beans (homemade or canned)
salsa, chili sauce or enchilada sauce
1 C shredded cheese

Mix eggs, milk and veggies and scramble in a bit of oil.    Top tostadas with beans (or put in first in taco shells), top with scrambled eggs, then top with sauce of choice and cheese.
Place in a 375* oven for 8-10 minutes until cheese is melted.
Great for breakfast, lunch or dinner!!!!!!!
                                   This combo would be great in tortillas as well - like burritos


SOUTHWEST MEAT AND BEAN STIR FRY
Cut into strips a couple pork chops or a chicken breast or even some ham or beef (use what you have)
1 med. onion cut into small wedges
1 pepper cut into strips
2 cloves of garlic
2 C corn (frozen or canned (drained)
1 - 15 oz. can of black beans (or kidney or what you have) drained
1 small zucchini (chopped) - I have also subbed broccoli - use what you have
1/2 C salsa

Heat a small amount of oil in a large skillet - add onion, peppers and meat - cook 6-8 minutes (until no pink in meat) and veggies are tender.
Stir in corn, beans and zucchini or broccoli and salsa - warm until flavors are blended.
Serve with/or over rice.


Super easy and flavorful dishes, using what you have on hand.  There are no set ingredients kiddos - use what you have.  You can make things as mild or spicy as you choose.  You can top with cheese if desired or add sour cream.  PLAY with your food and have fun.
Good food doesn't need to be complicated or expensive!!

I hope this gives you some ideas on how you can mix and match what you have and make some new and yummy comfort food.

  1. Hiya Cheryl, i do a rice stirfry in much the same way as your dish. Thats my supper tonight. I had homemade vegetable soup at lunch time.
    A dull but mild day so i washed my car. I live in the country so gets very dirty.

  2. The cornbread sounds yummy! I'd be tempted to go half and half on flour/cornmeal though ;-)

    I like to mix 1cup each fresh cooked black beans with frozen corn and salsa. Chill for a few hours and eat. I also put it on taco salads or heat it up and put in a burrito with just a Tbsp or 2 of cooked gr turkey/beef.

    Just a good ole' quesadilla. Can add in cooked bacon crumbles, shredded chicken (a restaurant here does that). Dip in a bit of sr cream......oh my, it may be time to make some breakfast!

    1. You can easily add more cornmeal.
      I like that as a dip as well. Yes, you can use so many goodies in so many ways. Quesadillas are so easy and I do those too.

  4. I make scrambled egg burritos and freeze them for lunches. One egg per burrito, I usually make 8 at a time. Can't eat corn, so use flour tortillas. Scramble the eggs, stir in salsa. Spoon the mix onto a tortilla, sprinkle with shredded cheese, roll, wrap in foil and keep them in a ziploc bag in the freezer. Warm one in the microwave on 1/2 power for about 6 minutes, flipping the burrito every 2 minutes. Tasty and filling with a fruit on the side.

  5. All three of the recipes look yummy! Just got a new wok with a gift card so we are looking for ways to use it besides Chinese.

    Smart & Final had some 99 cents per pound sales on meat; we picked up chicken leg quarters, a frozen turkey and a rain check for (2) spiral hams that were sold out. You can't buy any kind of lunchmeat these days for 99 cents per pound, so it's a good buy. Add in broth from the bones for free and it's a win! --Elise

  8. Those recipes all sound delicious. For your cornbread, what size pan? If 9x13, am thinking it would be easy to halve for a square pan. If it makes a square pan, all that much better!

    1. We all need a change now and then. I love fried corn any way and in stir fry it is tasty too. When I fry corn, I just put corn, onion, peppers in butter and fry up till all is tender. YUM

  10. Yum! I grew up in a Hispanic home so we just called that "food" lol!! It wasn't really what we call Mexican tho. We ate New Mexican. Our meals were essentially the same 90% of the time with an occasional variation. Every meal had pinto beans, red chili sauce, and flour tortillas. All homemade. With bfast there was eggs and chorizo. Lunch and dinner had pork and potatoes. As an adult, I joke about needing a good spicy fix about twice a week. I love it muy caliente but I have to tone it down for my husband. It's funny because I was a wimp in my family. Some of the stuff they ate was pure fire. My eyes would water just standing in the same room with my Grandma's hottest sauce! She wore goggles and gloves to make it lol.

    We never had salsa or guacamole and now I don't think I could live without them! I can only imagine how good they would've tasted with my Grandma's cooking! Especially her sopapillas. We ate ours as a savory but most of the Mexicans I've known eat them as a sweet with cinnamon sugar or honey. Now my mouth is watering lol!!!

      That all sounds good and very traditional in my opinion. I guess I must be a lover of 'New Mexican" as well!
      There is something about the flavor of refried beans, sauce and cheese all mixed together!! MMMMmmmm
      Never had a savory sopapilla.
