Howdy Ho all! Very cold morning - my thermometer says 20* F. The world is a combo of white and gray/dark - that is how the trees look. This morning though, I had some color outside. There were 5 pairs of cardinals in the backyard - eating what they could find until I went out to feed. They sure were pretty. I have a couple big old bluejays that visit and a big woodpecker - who is so handsome! Just love watching the birds.
OK - now my version which was eaten with gusto! It was so good. It tastes much like cheesecake.
8 oz. cream cheese softened
1/4+ C of regular sugar (measured around a 1/4C)
1 C of sugar free cool whip - (didn't have whipped cream or heavy cream to make any) used what I had
1/2 tsp. vanilla extract
1/4 tsp. almond
I pulverized about 5 or 6 sugar cookies and added to mixture (super fine) - didn't have sugar cookie mix
Mix it all together until smooth.
Note if you add sprinkles they kind of melt and change the color of the dip.
I served with vanilla wafers and graham crackers
After company was gone, I made some 'ice cream' sandwiches with the remaining dip and graham crackers. Wrapped in plastic wrap and then bagged and froze.
Here is another sugar free type cookie for those wanting a taste of sweetness without the all the calories.
These are really good. I use regular milk - as I don't keep almond milk. Raisins - craisins or any dried fruit if desired or maybe some nuts.Just use what you have! Great way to get fruit and oats into kiddos!!!
Need brown sugar and out? 1 Tbsp. Molasses to 1 C sugar - mix well.
Need powdered sugar and out? Put regular sugar in blender and pulse until powdered.
Cooking bacon? That grease is GOLD!!!!! Whether you fry or bake your bacon - keep the grease. It is FREE and it adds flavor to many fried items or for flavoring in others. It is all NATURAL as well!
I keep a jar in the frig with bacon grease all the time. I just keep adding to it. Mom used to leave hers out in a tin on the stove - but I like to refrigerate to keep it fresh.
You can now BUY bacon grease at the store, and it is very expensive!!!! Use your own.
It is all about having a good life and eating yummy things - all the while using what you have. It doesn't have to cost a lot of money - it just takes a little thinking and creativity.
It truly is about "making the most of your resources" and "living richly on less".

No, the 'stuff' usually settles at the bottom of the jar. Once or twice a year - I do scoop out grease and clean out the bottom of the jar and put grease back in.
DeleteI shared your Sugar Cookie dip recipe with my son for his littles. :) I can imagine it would be popular with a group of small boys. Those thin chocolate wafers (for making chocolate crusts) would also be good with the dip.
ReplyDeleteUgh, it is so cold! We have snow in the forecast for Friday/Saturday. I shall move some wood indoors for the woodstove. It burns better when it's not covered in snow!
You're so right about bacon grease as a flavor, but some of us are not supposed to eat bacon at all (fat and salt), so sad sad sad. I buy (at stupid expense) those real bacon bits and use just a teaspoon full with my Sunday scrambled egg, enough for that lovely flavor.
My grease is Olive Oil, and my cholesterol has dropped into normal range, first time in *years*. Now I don't get pressured to be on meds. :)

I have purchased real bacon bits too - if I see on sale. They are great for salads. Yes, they give some flavor.
Sorry you can't have bacon - I would be soooooo SAD if I were told no! I always have olive oil as well. Even some flavored ones I have received as gifts.

I only use a tsp of bacon grease, so just enough flavor. I use it maybe once a month, so keep it refrigerated. Those dips sound delicious.

DeleteI've had a dip similar to that before and it is tasty. TBG would go crazy for the freezer ones you did. Bacon grease is truly gold! Last year I received a bacon grease saver that has a removable filter on the top that catches all the little bits and I love it. But yes, a glass jar in the refrigerator works just as well. Stay warm!!

DeleteOh neat - that is cool with a filter in it. I have tried filtering through paper towel - and just make a mess. So I pour, let it settle and go. Good old Mason jar to the rescue!
It's definitely cold there! In fact, back at home they're at about the same temperature! We're about 59F at the moment here in Yuma. We've been cooler, but it has been warming up through the day. Today, the wind and lower temp will stick around.

ReplyDeleteI don't filter my bacon grease. I only use it for my husbands eggs or to fry potatoes. I keep it in the fridge.
I bought 12 cans of French cut green beans last Saturday for $1. A woman near me saw them and asked are those expired? Yes they were by only a couple of days. She didn't get any. I would've gotten more if I was able to carry more. I'm hoping there still might be some left when I stop in on Saturday. I was at Kroger last night and they're selling those same beans for 2.39 a can! I got mine for about 8 cents. So about $27 stayed in my wallet. Lol Expired yes but we all know they'll last awhile. I'll probably use a can a week so they won't last all that long anyway.
I read that those expiration dates don't mean much unless they are in regard to fresh dairy, meat, seafood etc...Processed, dry and canned stuff last years after. Archeologists found honey in Egyptian tombs that was perfectly fine to eat after thousands of years. Doritos from the seventies are also still good for nachos.

DeleteOh goodness, they will last a long while. They never used to have dates on stuff when I was coming up - and I have been reading that they may do away with them on canned and dry goods again. As long the can is in good condition and not rusted or bulging, they will be good. I have found some canned goods that got pushed back past date maybe 3 or 4 years and used them. Still here!

ANON - yep, honey never goes bad. It may crystalize but never goes bad. So many things are good for a long, long while.
DeleteThey sell 'prepper' food in tins that is good for 10-15-25 years! It always amazes me that people throw things away. They must really think that the food in the can "knows" the date!! I just laugh.

ReplyDeleteI also see duck fat in stores now. Any new shoes my grandmother purchased had duck fat applied to the insides of them as she was a devil for blisters. Duck got butchered, you knew a new pair of shoes were being purchased.

It certainly was cold today and the forecast says 9* tonight. I wonder if all the homeless have a warm spot to rest. So grateful for a roof over our heads.
