Comfort Food - A Couple New Ones!

 Comfort food - it is just good for the soul!  We think of soups and casseroles, chili, spaghetti, noodles, roast, mashed potatoes....oh the list goes on and on. 

Today I will give you a couple new recipes that I consider comfort and they are quite simple.  Who doesn't like simple?  
When I think of comfort food I think of yummies that warm my insides on a cool or cold day.  Those days when we just want to nest at home and feel warm and cozy.

UPSIDE DOWN PIZZA
1 lb. of ground meat - browned
1 onion - chopped
15 oz. or pint of pizza sauce
1/2 tsp. garlic salt
1/4 tsp. oregano
2 C shredded mozzarella cheese

2 eggs
1 C milk
1 Tbsp. oil
1/2 tsp. salt
1 C all purpose flour
1/2 C grated parmesan cheese

Brown meat and onion, drain.  Stir in sauce, garlic salt and oregano - spread into a greased 13 x 9 pan.  Sprinkle with mozzarella, set aside.  Mix eggs, milk, flour, salt, oil  - pour over meat mixtures - top with parmesan cheese.  Bake 350* for 30  minutes.
Super easy and so yummy.
*You can add whatever pizza ingredients you want to the meat mixture.


SMOTHERED SPEEDY BURRITOS
1 lb. ground meat
 1 onion - chopped
reg. can cream of mushroom soup
reg. can of tomato soup
10 oz. of enchilada sauce
1 taco seasoning pack (or equivalent)
12 - 10 inch flour tortillas
2 C shredded cheddar cheese

Brown meat and onion - set aside.  Mix soups, enchilada sauce and taco seasoning together - set aside. 
Spoon meat mix evenly into the tortillas - roll - place seam down in an ungreased 13 x 9 pan.  Tope with soup mixtures and bake at 350* for 30-40  minutes - then sprinkle with cheese and bake till melted.
Can top with chopped tomato, olives, sour cream, etc.


HAM AND CHEESE CUPS
2 C self rising flour
1/2 Tsp. baking soda
1/2 C mayonnaise
1 C milk
1/2 C cooked ham - chopped (I have used deli ham as well)
1/2 C shredded cheddar cheese or your favorite
Combine flour and baking soda and set aside.  Mix remaining ingredients - add to flour mix.  Fill greased muffin tins 2/3 full.  Bake 425* for 16-18 minutes.
Great for breakfast, lunch, dinner, snacks.  easy on the go bites!  Tope with sour cream if desired.


There you go - and few more easy recipes that are filling and yummy and will will warm a belly on a chilly day.

  1. Thank you, Cheryl, those all sound good! In my household, comfort food often involves sausage or cheese. I blame it on the deep, Wisconsin roots of my family. My husband and sons love a treat of sliced salami, cheeses, crackers and fruit. My sons grew up loving a skillet dinner of cut up smoked sausage or kielbasa, potatoes, onion, apples and cabbage. Baked macaroni and cheese was also a favorite comfort food of theirs. That, or Jambalaya styled sausage, rice and diced onion & peppers, shredded cheddar on the table to sprinkle on top. It will be interesting to see what your readers enjoy as comfort foods! --Elise

    1. OK - now I'm hungry! Those all sound so good. I love cheese in anything. Baked mac and cheese is the best! Smoked sausage and fried potatoes - yes please. Jambalaya - Mmmmmmm.

When I was a child and we'd visit my grandparents in Wisconsin, a weekend breakfast always consisted of some sort of sausage (often deer sausage as my Grandpa was a hunter) with hearty breads, butter and jam. Plenty of coffee, too; even the children were given a cup of a little coffee in a cupful of cream. Wonderful, comforting memories!

  3. I do the burritos with just enchilada sauce. A meal expander? Cook up black beans and freeze in 1 cup portions. Use the beans and use less meat for a good protein load and $ savings.

    1. Great tip, Elle. I do the same thing except I use potatoes or rice to stretch the meat, beans work too though.

    2. Elle I almost always add beans to taco meat - or rice. May have to try Belinda' potatoes - that sounds good.

  4. I don't eat meat, so my comfort meals tend to look a little different. I make a few really good baked pasta dishes; I have a one-pot pasta dish that everyone loves around here as well. Beans and rice is my quick go-to meal when I haven't had time to cook but need to get something on the table quickly (I keep a few cans of beans around for emergencies, but usually I cook them from dry in my Instant Pot). I've been making it for years, so it's kind of comfort food to me for now as well. Breakfast casserole with eggs and beans and some kind of potato cooked in there is another family favorite that's major comfort food. And there's always my husband's macaroni and cheese- it's the only thing he knows how to make, but it's always a comfort when I don't have to cook. ;)

    1. Well I have to agree with mac and cheese - one of my favorites.
      Pasta dishes and beans and rice are wonderful comfort meals. The breakfast casserole sounds delish.
      You mentioned nothing that sounded bad to me. It all sounds comfort!

  5. Winter comfort food takes me back to the Sunday nights of my childhood when we had fried eggs and toast and cocoa. It has never been the same in my own home so I can only recreate it in my memories. My Dad always dipped his toast in his cocoa and I really wanted to like that and be like Daddy but I did not like the soggy toast.

    1. What a cute memory. I had to snicker as I don't like soggy toast either. My Daddy used to break up either crackers or corn bread into milk and eat it. NOPE!
      Isn't it neat what memories pop in our heads when we talk about food? Love it.

  8. Tummy warming recipes! I think the crackers or cornbread in milk is a southern thing. Gary knew some people who put popcorn in their milk for an evening snack.

    1. I think you're right, Donna. I remember my grandparents eating cornbread with milk, but I never tried it. Also, they would split a hot biscuit and make a sandwich with a thick slice of garden tomato. That didn't appeal to me, either, but the memories are sure nice.

    2. It may be - but I think my Dad grew up with that as a stable food source. They were poor and often only had that to eat. I remember my brothers and my oldest sister talking about that being supper some nights - there was not a lot back in the depression days.
      Dad was from SOUTHERN Indiana!!!! LOL

    4. Regional eating habits are interesting. I see recipes for fried chicken on waffles and that is something I've never had. My brothers remembered having fried chicken for breakfast. The family was very poor and mostly likely ate what they raised. I was an "oops" so really didn't grow up with the boys.

  9. Thank you for the recipes, Cheryl! I always come away from your posts with at least one gem. Gonna try the pizza bake this weekend. We love one pot/skillet meals here. A moderate amount of meat with lots of veg and add-ins, and we are happy campers. A bonus of that type of meal is the "planned overs". Often things are even better a day or two later.

  11. I made the Ham and Cheese cups today, Cheryl. We had them for breakfast and they were good. These would be great to take in a lunchbox too instead of a sandwich. Thank you again for the recipe.
