Mid-week Musings

Hi everyone.  Sorry I have M.I.A. for a couple days.  It's been one crazy week so far and not in a good way.  My mind is just about exhausted, but onward I go.

There is so much to get done in the next few weeks.  I have my first Christmas get-together on the 13th, then more after that.  So life will be busy, busy, busy.


Here are a couple yummy recipes you might like to try.

KITTY LITTER CANDY
2 c sugar
2 Tbsp. cocoa powder
1/2  milk
6 Tbsp. butter
1/2 C peanut butter
2 C old-fashioned rolled oats
1/2 tsp. vanilla extract

Combine sugar and cocoa powder in a saucepan.  Stir in milk and butter and bring the mixture to a boil.  Cook for 2 minutes and remove from heat.
Stir in peanut butter, oats and vanilla.
Lay out waxed paper.  Drop teaspoons of the mixture onto it and let it cool.  Makes 3 dozen candies.
Pretty darn easy!


CHRISTMAS BREAKFAST OR BRUNCH
20 oz. bag of frozen hash browns - thawed
4 C shredded cheese
2 c cooked dice ham
7 eggs
1 C milk
seasonings

Place potatoes in a greased 13 x 9 pan.  Sprinkle the cheese over the top of potatoes.  Beat milk and eggs and seasonings together and pour over other ingredients.  Bake covered for 1 hour.  Uncover and bake an additional 15 minutes.
This will serve a lot of people.  I would suggest to serve with muffins or biscuits.  Mmmm - biscuits/gravy would be good with this as well.
What a fun and easy morning (or any time) meal.

  1. Hi Cheryl, Take a deep breath! Isn't it funny how we try to plan ahead so that we won't be stressed and the time gets away from us. Relax and have a good time on the 13th. People are more important than food or things. Nancy

      This week has been other things - the big one was a family medical emergency. All is much better today - just tired.

    Been lagging along at home waiting for medications to kick this cough and trying to get lights on the tree.

    Gained 5 pounds at Thanksgiving, ugh! but had lost it right before so balance is even up now.
